Ms. Funaya has worked at Chuzenji Kanaya Hotel for 35 years. She said the hotel relied on returning guests and maintained relationships with customers who had visited regularly for many years, despite undertaking limited marketing activities.

The conversation also addressed staff development and the hotel’s approach to hospitality. Ms. Funaya explained that practical, workplace-based experience remained central to training, allowing employees to learn directly through their interactions with guests. Rather than relying primarily on written materials, the hotel emphasised daily service and direct experience.

On its culinary offerings, Ms. Funaya said the hotel respected its historical approach to food while adapting to changing preferences. Chefs developed dishes using local ingredients, with research and development undertaken where necessary. Approximately 90% of the ingredients were sourced from Tochigi Prefecture, while some seasonings came from overseas.

The interview also explored the hotel’s architectural features and facilities, including a Canadian boiler located near the dining room. The boiler was used during winter, when guests could enjoy the warmth of the fireplace.

Ms. Funaya described the surrounding natural environment as central to the guest experience. The hotel did not organise many conventional events or activities, instead encouraging visitors to relax and appreciate the landscape. Lake Chuzenji and its surroundings are protected as part of a national park, helping preserve the area’s natural environment.

Discussing the hotel’s seasonal appeal, Ms. Funaya highlighted winter scenery and the opportunity to enjoy snow. A ski area in Yumoto is approximately 20 minutes away by car. She also explained the distinction between Chuzenji Kanaya Hotel and its sister property, Nikko Kanaya Hotel, whose history spans approximately 151 years. While Nikko Kanaya Hotel suited visitors exploring the wider Nikko area, Chuzenji Kanaya Hotel catered to guests seeking a quieter stay immersed in nature.
