
Chef Sau del Rosario from Pampanga, Philippines, presented traditional Filipino dishes at the closing edition of the Southeast Asia Regional Hawker Showcase at Raffles Courtyard
The final instalment of the Southeast Asia Regional Hawker Showcase at Raffles Courtyard in Singapore featured Philippine cuisine, highlighting the country’s diverse culinary heritage. The event ran until 21 September 2025 and drew food enthusiasts eager to sample regional flavours.

Renowned Filipino chef Sau del Rosario from Pampanga, Philippines, brought his signature interpretations of iconic dishes to the showcase. Among the highlights were Lechon, a celebrated Filipino specialty, served alongside Pinakbet, a traditional mixed vegetable dish, and Sinigang na Bayabas, a Pampanga-style soup prepared with tamarind and ripe guavas.
Chef Sau’s participation underscored the growing international recognition of Filipino cuisine and its unique regional variations. Visitors to the showcase had the opportunity to experience the authentic flavours of Pampanga, often regarded as the culinary capital of the Philippines.
