The Philippine Embassy in Singapore, in partnership with Feast Asia of the Grand Mercure Roxy Hotel, kicks off a culinary celebration showcasing authentic Filipino cuisine and culture.
THE Philippine Embassy in Singapore, in collaboration with Feast Asia of the Grand Mercure Roxy Hotel (GMRH) Singapore, launched the Philippine Salo-Salo: A Culinary Celebration of Filipino Heritage with a preview dinner on 12 April 2024. The event, which runs until 21 April, celebrates Filipino Food Month and National Literature Month in April, with the theme “Engaging the Youth in Shaping the Future of Philippine Culinary Heritage and Gastronomy.” It also serves as the kick-off for the year-long activities commemorating the 55th anniversary of Philippines-Singapore diplomatic relations.
GMRH first featured Filipino cuisine in its buffet in June 2015, and due to its popularity among Filipino and Singaporean clientele, the hotel decided to collaborate once again with the Philippine Embassy for a second iteration of the event.
Embassy Chargé d’ Affaires Dr. Emmanuel R. Fernandez highlighted the significance of salo-salo, a Filipino tradition that epitomizes communal dining and the country’s rich history and culture. Salo-salo, which translates to “get together,” symbolizes Filipino togetherness and hospitality, revolving around enjoying delicious food that reflects the diversity and heritage of Filipino cuisine.
The launch event was attended by members of the diplomatic community, including Ambassadors from Malaysia, Thailand, Timor-Leste, USA, and Vietnam, along with institutional partners, collaborators of the Embassy, media, local food bloggers, and the hotel’s patrons. Singapore-based Filipino talents from TAF Productions provided music to complement the buffet.
Especially curated by Filipino chef Edward Lim Esmero and Feast Asia’s Executive Chef Lester Wang, diners can savor authentic Filipino cuisine and experience Filipino culture. Adult diners also have the opportunity to taste Emperador brandy from Emperador Distillers, Inc., the Philippines’ largest liquor company.
Throughout the Philippine Salo-Salo, guests can indulge in a variety of authentic Filipino dishes, from savory classics like adobo, sinigang na baboy, lechon, lumpiang shanghai, kare-kare, caldereta, ginataang sugpo, pancit bihon, chicken mami, to desserts such as halo-halo, ginataang bilo-bilo, turon, maja blanca, leche flan, and puto, promising to delight taste buds and evoke the warmth and hospitality of the Philippines.
On weekends, visitors can explore pop-up booths featuring products by Filipino entrepreneurs and brands, and participate in workshops and activities organized by the Philippine Embassy in collaboration with local partners. The ten-day lunch and dinner buffet promotion will be capped off with an acoustic performance. Event styling was done by Estilo & Co. Events.
